Where is fall??? Four years ago on this very weekend, Jon and I had to cancel his birthday camping trip because of too much snow. This weekend it was 85 degrees. I’m over it Mississippi. Time to get with the program and cool the heck down. I have two new pairs of jeans and three new sweaters I need to get some milage out of.
When football season started, I decided to bring fall back in a major way, even if Mother Nature had other plans. I brought back our “Souper Sundays” – which basically means I’m giving into my laziness and cooking soup every Sunday. Minimal effort with maximum taste output. And yesterday I hit the jackpot of soup recipes.
Martha Stewart’s Lamb + Bulgur White Bean Stew became my Beef + Bulgur White Beat Stew. Not because I didn’t want lamb. Oh, contraire. There is a disappointing lack of options when it comes to food where I live. Lots of seafood, but a girl can only have crawfish once or twice (in five years). So I substituted the lamb for beef stew meat. Still absolutely amazing, and I can only imagine what it would be like with the lamb (earth shattering). Anyway, if you’re looking for a stew that is going to knock your socks right off your feet, try this one. With lamb or beef.
This weekend was very deserved in R.Simple House. Last week was especially rough, with lots of unexpected unfun. There was only problem Friday night – an unexpected and unwelcome visitor was on her way: Tropical Storm Karen.
I just had a feeling a hurricane would be making it’s way towards the Gulf Coast soon, so I wasn’t shocked when I woke up Friday morning to a Hurricane Watch, which was later upgraded to a Hurricane Warning. Not shocked, but not happy. Harry and I secured all our chairs and pots and wood outside, made sure we had water and food, and braced ourselves for Karen.
Luckily, life threw me a bone and downgraded Tropical Storm Karen to a Tropical Depression before she got here, instead of the Cat 1 Hurricane which was predicted. We had a few smatterings of rain yesterday, including a twenty minute downpour that started seconds after I got home from my run, so that makes me think life and I are getting along again.
Regardless of the (not-so) raging storm headed our way, I took it easy. Last week really kicked my butt, so I rested this weekend. I worked out hard, loved hard, and played hard… but that was the extent of my hard work. I laughed a lot with my boy, read lots of books, sang lots of songs, did an enormous amount of cuddling… and I even snuck in a nap. And today I feel refreshed and ready for a new week to kick my butt. But I’ve got a good attitude, so it’s not going to be that bad.

This weekend pretty much sped by. Does anyone else feel like they need a day in between Saturday and Sunday? I would use it to clean and paint my toenails. What about you?
My mom came down this weekend for a visit. It included lots of cooking and cleaning (thanks mom!) and infinite amounts of reading, swinging, singing, and laughing with this kid. And maybe a few too many grandma snuggles when Harry just wanted to explore. But that’s what grandma’s are for, right? (At least, that’s what she’d tell you 😉
I threw a baby shower for a good friend of mine here this weekend (thus all the cooking and cleaning). But I was a really bad blogger and took zero pictures. I did remember to snap this one of my favorite baby shower game AFTER the party was over and I had already cleaned up the super pretty dessert table underneath. Whoops. I’ll work on being a better blogger.
And of course, there was a lot of time just spent with this kid. The best kind of time. In fact, he held me down and gave me kisses Sunday morning. I was in heaven.
