Beef + Barley White Bean Stew

Where is fall??? Four years ago on this very weekend, Jon and I had to cancel his birthday camping trip because of too much snow. This weekend it was 85 degrees. I’m over it Mississippi. Time to get with the program and cool the heck down. I have two new pairs of jeans and three new sweaters I need to get some milage out of.

When football season started, I decided to bring fall back in a major way, even if Mother Nature had other plans. I brought back our “Souper Sundays” – which basically means I’m giving into my laziness and cooking soup every Sunday. Minimal effort with maximum taste output. And yesterday I hit the jackpot of soup recipes.

Martha Stewart’s Lamb + Bulgur White Bean Stew became my Beef + Bulgur White Beat Stew. Not because I didn’t want lamb. Oh, contraire. There is a disappointing lack of options when it comes to food where I live. Lots of seafood, but a girl can only have crawfish once or twice (in five years). So I substituted the lamb for beef stew meat. Still absolutely amazing, and I can only imagine what it would be like with the lamb (earth shattering). Anyway, if you’re looking for a stew that is going to knock your socks right off your feet, try this one. With lamb or beef.

    You know, that’s the thing about living in Mississippi… it’s so different from everywhere else! I know that each state is unique (having lived in about 20 of them or so and visited all but 4), but Mississippi is truly a land of its own!

    Way to let your life (or your food) define … not your place of residence!

    The soup looks incredible and I might just surprise Scott with it one day. Thanks for sharing!
